Cheesy Crockpot Potato Soup

  • 3 cans chicken broth
  • 1 large onion diced
  • 2 Tablespoons minced garlic
  • 8 medium potatoes peeled and cubed OR 1 package cubed frozen potatoes
  • 1/2 cup evaporated milk
  • 3 Tablespoons cornstarch
  • 4 cups shredded cheddar cheese
  • 4-5 green onions sliced
  • 1 package bacon pieces


  1. Spray Crockpot with cooking spray.
  2. Place all potatoes, broth, onion, and garlic into Crockpot.
  3. Cook on low for 6-8 hours or high for 4 hours.
  4. Approximately 15 minutes prior to serving, stir in cheese, green onions and bacon.
  5. In separate bowl, whisk together cornstarch and evaporated milk. Pour into soup and allow to continue cooking for 15 minutes or so, stirring occasionally.
  6. Serve topped with cheese, green onions, and/or bacon pieces.
