Tasty Tuesday: Sloppy Joe Casserole
This is one of my favorite go-to recipes. It’s great for fall evenings– warm, gooey and filling. Enjoy!
Sloppy Joe Casserole
1 box elbow macaroni
1 packet sloppy joe powdered mix
1 small can tomato paste
1 large can (plain) tomato sauce
1 medium can (plain) tomato sauce
1 lb hamburger
1 onion, diced
Salt and pepper, to taste
1 package shredded cheddar cheese
Cook macaroni per package instructions. Drain and return to pot. Meanwhile, brown hamburger and onion until the meat is no longer pink. Season meat mixture as desired with salt and pepper. Drain meat and add it to the pot of drained macaroni. Stir in the 2 cans of tomato sauce, the can of tomato paste and the sloppy joe mix. Allow to simmer for 10 minutes on low, stirring occasionally. Before serving, stir in the package of cheddar cheese and mix until beginning to melt. Serve hot.
