Tasty Tuesday: Buffalo Chicken Pizza

This is one of my family’s favorite recipes.  We tend to mix it up with different toppings, depending on what we are in the mood for. 

Buffalo Chicken Pizza
4 skinless, boneless chicken breasts, cooked and cubed/shredded
4 TBS butter or margarine
1 small bottle Frank’s Red Hot Sauce
1/2 red onion, diced finely
1 tomato, sliced
2 cups mozzarella cheese, shredded
1 Boboli (or similar) crust
1 small can black olives
Blue cheese crumbles, if desired

Melt the butter in a microwave safe bowl.  Mix in the red hot sauce (I usually use about 3/4 of the bottle.)  Coat the chicken chunks in the sauce mixture.  Dump the entire bowl– chicken and remaining sauce onto the Boboli crust.  Top with mozzarella, onion, tomato and black olives.  Bake until cheese is bubbly and the pizza is heated through.  Sprinkle with blue cheese crumbles, if desired and serve.

Depending on what we have on hand, determines what the toppings are.  Sometimes, we use just onion, or just the chicken mixture and cheese.  Occasionally I drizzle ranch dressing on top before eating it.  Its really up to you and your family.  Personally, I like adding my onions raw after I take it from the oven.  I like the bite of the red onion to counter-act the hot sauce. 

You can also try this with BBQ sauce, just combine the BBQ sauce and chicken, but omit the butter.  When we make it with the barbecue sauce, I like to use bacon pieces and cheddar cheese to make it more of a bacon cheddar chicken pizza.
