When my boss comes into town, occassionally over lunch we will begin talking about the blog. She will ask where I get my ideas for the various recipes… I laugh and say, “Well, most of them are mistakes that taste good…” That’s what today’s recipe for Shredded Chicken Teriyaki Sandwiches was… a mistake. But a delicious, yummy mistake that I plan on making again soon. Enjoy!
Since I shared how this was a mistake… I should probably share WHY it was a mistake. I was planning on making barbecue chicken sandwiches but for some reason grabbed the ingredients to make the chicken teriyaki instead. I mixed everything in and started shredding the chicken and then realized my blunder. Oops. What to do? Make chicken teriyaki sandwiches!
Shredded Chicken Teriyaki Sandwiches
1-1/2 pounds chicken thighs
1 can low sodium chicken broth, divided
1/2 cup low sodium soy sauce
2 teaspoons ground ginger
4 green onion stalks, sliced thinly
1-2 teaspoons red pepper flakes, optional
2 Tablespoons garlic powder
1 Tablespoons ground pepper
1-1/2 Tablespoons cornstarch
Place chicken thighs, with skin, into Crockpot with 1/2 cup of water. Cook on low for 8-10 hours or high for 4-6 hours. Remove chicken from Crockpot and place to the side. Carefully, drain juices from Crockpot and return to unit. Remove skin and bones from thighs and discard. Shred chicken with two forks. In a small bowl, whisk together 1/2 cup of chicken broth and cornstarch. Pour over shredded chicken and stir to combine. Add soy sauce, ginger, red pepper flakes (if using), garlic powder and ground pepper. Stir to incorporate. If chicken seems too dry, add chicken brother 4-5 Tablespoons at a time until it reaches desired saucy-ness. Allow to sit in Crockpot on low for approximately 6-7 minutes. Immediately before serving, gently stir in green onion slices. Serve on your favorite bun with your cheese or toppings of choice.
