Easy Cheesy Chicken Broccoli Pasta

This recipe for our Easy Cheesy Chicken Broccoli Pasta is amazing.  Do you remember having Sizzle and Stir meals?  They came with the pasta and seasoning and all you added was chicken.  Don and I used to eat a lot of these because they were cheap and easy to make.  They stopped making them several years ago and every once in awhile, Don and I will look at each other and say “Do you remember those?!”  Back in the days when we were broke and I wasn’t the best cook… those were the days.  So, I set out to recreate that Sizzle and Stir taste… and I think I nailed it.  Enjoy.

Easy Cheesy Chicken Broccoli Pasta

16 ounces pasta

1 lb boneless, skinless chicken breasts

1 teaspoon oil

1 package frozen broccoli

2 cups sharp cheddar cheese

1 Tablespoon garlic salt

2 Tablespoons black pepper

1 Tablespoon Creole seasoning

3/4  – 1 cup low fat milk

Cut chicken breasts into bite size pieces.  Saute chicken chunks in oil over medium-low heat until cooked through.  Meanwhile, boil pasta per package, omitting salt.  Drain and set aside.  When chicken is done, sprinkle with Creole seasoning and stir to distribute.  Add frozen broccoli and continue to cook, stirring occasionally, until broccoli is thawed and warm, approximately 6-7 minutes.  Stir chicken mixture into pot with pasta.  Return to stove and reduce heat to medium-low.  Add cheese and stir continuously until melted.  Slowly add milk, a little at a time, until pasta becomes creamy and gooey.  Season with garlic salt and black pepper, stirring to combine.
