If you are a long-time reader, you know my specialties are recipes that are simple and quick to make. My tomato and spinach pasta is great for a busy school night or when you just don’t want to spend a lot of time on dinner.
Tomato and Spinach Pasta
16 ounces pasta
1 box frozen spinach, thawed
1 can diced tomatoes with herbs, drained
2 large cans tomato sauce
1 lb ground turkey
1 medium onion, diced
2 Tablespoons Italian seasoning
2 cups mozzarella cheese
Brown turkey and onion in medium skillet over medium-high heat until turkey is no longer pink. Meanwhile, prepare pasta per package directions. If needed, thaw frozen spinach in microwave while preparing turkey and pasta. Drain pasta. Toss sauce, turkey mixture, spinach and seasonings in cooking pot. Reduce heat to medium-low. Stir pasta occasionally until heated through. Serve hot, topped with mozzarella cheese.
Feel free to make this delicious recipe your own. Omit the turkey, or swap in sausage or ground beef. Try different spices, seasonings or cheesed based on your family’s preferences.
