Chicken Fiesta Salad

For today’s delicious recipe, I am sharing my quick Chicken Fiesta Salad.  This is perfect on a hot summer day and easily made to your specific tastes.  It’s even good in a packed lunch!  All the toppings and ingredients are super simple and can be thrown together for a healthy, delicious meal in no time!  And, before I get any comments… I did forget the chicken in the picture!  Enjoy!

Chicken Fiesta Salad | Mini Van Dreams

 

Chicken Fiesta Salad

1 head iceberg lettuce OR lettuce mix of choice

1 large tomato, chopped

1 large red onion, diced

1/4 green onions, chopped

1 ripe avocado, diced

1 can corn with jalapenos (or regular corn), drained

4 ounces jarred jalapenos, sliced

1 package pre-cooked, refrigerated chicken strips (approximately 12 ounces), diced

1 cup shredded Sharp cheddar cheese

4 ounces fat free French dressing

Tear lettuce into bite-sized pieces.  Divide lettuce among four plates.  Top each plate of lettuce with 3 ounces of chicken.  Layer 1/4th of tomato, red onion, green onion, avocado, corn, jalapenos and cheddar cheese on top of each plate of lettuce.  Drizzle each salad with 1 ounce of dressing and serve.

30.6 Protein |  7.3 Sugar | 1074 Sodium | 5.7 Fiber

*Omit avocado to reduce fat to 11 fat grams and 6.6 saturated fats*
