Cajun Chicken and Potatoes
Today’s recipe for Cajun Chicken and Potatoes is amazing! Growing up, we used to have these packets of potatoes on the grill that my family called potato surprises. This recipe reminds me of those, but with the added chicken. If you don’t have or like Cajun seasoning, feel free to use any type of seasoning mix you like. Enjoy!
Cajun Chicken and Potatoes
4 boneless, skinless chicken breasts cut into bite-size pieces
1 green bell peppers, chopped
1 onion, chopped
2 garlic cloves, minced
4 medium Yukon Gold or Idaho potatoes, cut into bite-size pieces
1/2 cup shredded cheddar cheese
1 teaspoon garlic salt
1 teaspoon table salt
2 teaspoons ground black pepper
2 Tablespoons (or to taste) Cajun or Creole seasoning
In medium pot, over medium heat, cover potatoes with 1″ of water and 1 teaspoon table salt and bring to boil. Boil potatoes until just tender, approximately 10 minutes (you do not want them falling apart). Meanwhile, saute chicken in large non-stick skillet. After approximately 5-6 minutes, add onions and peppers and continue to saute until chicken is done and onions and peppers are tender. Add garlic and continue cooking for 3-4 minutes. Reduce heat to low. Drain potatoes and add to chicken and onion/peppers/garlic mixture. Stir gently to combine. Season with garlic salt, black pepper, and Creole or Cajun seasoning. Stir gently to incorporate seasonings. Serve with shredded cheddar cheese, if desired.
