- 2 bricks low fat cream cheese, cut up.
- 2 cans Rotel, drained
- 2 chicken breasts, cooked and diced into bite sized pieces
- 2 cans chicken broth
- 1 can corn, drained
- 2 teaspoons black pepper
- Combine all ingredients into a large pot. Stir to combine.
- Heat on medium-low heat for 15 minutes, until heated through. Stir occasionally to ensure cream cheese melts to a creamy consistency.
- Serve with crackers.
