Recently, I tried the turkey panini at a local coffeehouse chain. Loved it and wanted to try to recreate it at home. With some trial and error, I created my Turkey Panini Rustico. This delicious panini can easily be made in a skillet or in a panini maker. The best part – you probably have most, if not all, these ingredients on hand! Feel free to customize the toppings – I am not a big spinach-on-sandwiches fan, so I left mine off. But, pile it in on yours if you like! Don’t like onions or tomatoes? Leave them off! This quick and delicious panini will definitely become a family favorite!
Today’s Black and Bleu Quesadillas is one of those recipes that when you try it you think, “Why didn’t I ever think of that?” I can’t take all the credit though, I was flipping through a cookbook and came across a black and bleu salad with roast beef and bleu cheese. Our fettuccine with creamy tomato sauce is perfect when you want an Italian-style meal but don’t want spaghetti again. While simple and delicious, boring old fettuccine gets kicked up a notch with some delicious additions. While this particular version does not include diced chicken, Don and I agreed that it would be a perfect addition for the next time we have it. So, feel free to throw in some cooked chicken breasts, or even cooked shrimp, and enjoy!
