I always try to include fish in my diet, but I never know what to do with it to make it appetizing.  I had seen a recipe for some olive salsa and thought I could create a tilapia with olive salsa dish that could be quick and healthy.  Tilapia with Olive Salsa tastes so heavenly, you will forget you are eating healthy.  You can have it on the table in less than 20 minutes, yet it is fancy enough to be served at a dinner party or for a special occasion.   (more…)

How is everyone’s new year going? I am back eating MacroEd, so I am a bit cranky. (Okay, maybe alot cranky.) If you are looking for a healthy living plan – definitely give them a try. Today’s recipe for Chicken Tortellini Soup was one of those grocery store creations that I come up with standing in the aisle.  I was hankering for homemade chicken noodle soup, but I wanted something with a bit more substance to it.  So, while walking through the deli and dairy area, I saw refrigerated cheese tortellini and thought… Aha!

Each year around Thanksgiving, I always get a chuckle about the first turkey I ever made on my own.  It was an eye-opening experience at the crack of dawn – one I have never lived it down.  Since then, I have made several turkeys and now it is old hat… sometimes, I even remember to take out the giblets.   (more…)
