About two months ago, I joined MacroEd and began eating a macro-style diet. While not for everyone, eating to my macro nutrients (fats, carbs, and proteins) and not just to calories has helped me lose 13 pounds in 8 weeks. It has been eye opening the foods that have carbs in them that you normally do not think about. One of my favorite foods is pizza… and I knew I had to find a lower-carb alternative quickly.
Before making ham and beans, I really didn’t realize how easy it truly was. I wasn’t going to share the recipe, but I thought maybe I wasn’t the only one who didn’t realize how easy it was! So, I am going to share my recipe… it tasted just like mom’s. Serve it with hot cornbread and enjoy.
My Grandma (dad’s mom) died when I was six. I don’t remember much of her, just bits and pieces. I don’t honestly know how much I remember and how much has been told to me through the years. The lines are rather blurry. The one thing I do have of hers is the apple dumpling recipe she used to make all the time. It is so sad when recipes like this get lost in time – just this week I purchased an estate lot of handwritten recipes off eBay. Someone’s kids probably didn’t want them and sent them to auction – maybe I will find some good ones. If not, just the idea of someone hand writing these recipes is amazing… just like the recipe notebooks Grandma used to have.
