Today’s recipe for Chicken Tortellini Soup was one of those grocery store creations that I come up with standing in the aisle. I was hankering for homemade chicken noodle soup, but I wanted something with a bit more substance to it. So, while walking through the deli and dairy area, I saw refrigerated cheese tortellini and thought… Aha!
Today’s recipe for easy white chicken chili is so easy and perfect for a chilly night or when you don’t have time to throw together a full meal. I love when recipes are quick and easy – almost faster than going through the drive thru for fast food. Plus, white chicken chili is a perfect “belly warmer” when it is cold outside. With very few ingredients – most you might already have on your pantry shelves – you can have this delicious chili on the table in a matter of minutes.
Before making ham and beans, I really didn’t realize how easy it truly was. I wasn’t going to share the recipe, but I thought maybe I wasn’t the only one who didn’t realize how easy it was! So, I am going to share my recipe… it tasted just like mom’s. Serve it with hot cornbread and enjoy.
Oh my! You have to try this Saucy Turkey Burger with Pico. This delicious burger is on the table as quick as it takes you to cook the turkey burger! Really. I was walking through the grocery store and stumbled across a bottle of chili sauce in the condiment aisle. I had never had it before, and it was on sale… so I thought “why not?” My next thought was “what can I make?” I came up with this saucy turkey burger with pico. This one comes in at 445 calories per burger (with bun and toppings). You could lower these totals by using 93% fat-free ground turkey and low or no-fat Swiss cheese… However, the deliciousness of this burger made those calories worth it in my book. Pair it with some delicious broccoli or cauliflower, and you are good to go. Oh my. Enjoy.
You know how some days you just get tired of chicken? And plain pork chops are so boring! I decided to kick it up a bit and came up with these Bacon and White Cheddar Pork Chops. I mean… bacon, tomatoes, and white cheddar cheese… how could it be wrong? These are perfect in the oven, but you could easily throw these on the grill also! Enjoy.
My smoked sausage penne alfredo with cherry peppers is a twist on traditional alfredo. It combines the smokiness of sausage with the creaminess of alfredo sauce and the spiciness of cherry peppers. If hot isn’t your thing, feel free to omit the cherry peppers or swap them out with cherry tomatoes! Enjoy!
People, go buy an air fryer right now. I LOVE MINE. I have never, ever, ever been able to make fried chicken… until now. Grab your air fryer and make these healthier air fried chicken legs! They are crispy on the outside and juicy on the inside. Serve them with some mashed potatoes and dinner is done.
Swiss cheese rosti potatoes is one of my favorite Swiss recipes. Whenever we go to Amish country, we always stop at the Chalet in the Valley for a meal – and the first thing I order is Swiss cheese rosti to go with my schnitzel. But, trust me… you can make it at home easy and quickly… without a trip to Switzerland! Of course, my Swiss ancestors are probably spinning in their graves… but, oh well.
Happy Tuesday! Today, I am sharing my healthy buffalo chicken pizza. Yummy! This pizza is so delicious and easy. If hot wings aren’t your thing, you can easily use a healthy barbecue sauce or a low-sodium marinade. This amazing pizza hits the best of both worlds – wings and pizza. How can you go wrong on your next family movie night?
I think these No Bake Oatmeal Power Balls are my new go-to snack! So delicious and, if you eat them frozen, they are a perfect snack for that afternoon sweet tooth! Plus, they are a cinch to make since they do not require cooking and very minimal effort – in fact, the twins helped make this batch! Just pick out your favorite trail mix (raisins are a yummy addition!) and grab your food processor and let’s get to power-balling!
